30 Oct Mediterranean Orzo Medley with Tuna
Mix up your side dishes this year with this tasty Mediterranean Orzo Medley with Tuna recipe. The combination of all these ingredients, including Wild Selections Solid White Albacore Tuna, will leave your taste buds craving more of this tuna pasta recipe.
- 2 cans 5 oz. Wild Selections Solid White Albacore Tuna, drained
- 1 cup orzo pasta
- 1 cucumber sliced
- 1/2 cup red onion diced
- 1/2 cup parsley fresh and chopped
- 1/2 cup Kalamata olives drained and diced
- 3/4 cup feta cheese
- 4 roasted red bell peppers drained and diced
- 1/2 cup olive oil
- 1 clove of garlic minced
- 1 tsp oregano
- 2 tbsp Dijon mustard
- 3-4 tbsp red wine vinegar
- 3-4 tbsp lemon juice
- Salt and pepper to taste
For dressing: In a mixing bowl, while whisking, add your garlic, oregano, Dijon mustard, wine vinegar, salt and pepper. Slowly add olive oil, continue whisking. Then add in lemon juice. Once you are finish whisking, pour into mason jar. Place in fridge while preparing orzo medley.
For Orzo Medley: Cook orzo pasta as directed on package. Drained cooked pasta and mix with 3-4 tablespoons of dressing in a large mixing bowl.
In large mixing bowl, add in tuna, roasted bell peppers, olives, parsley, red onion, and cucumber.
Toss entire tuna mix with dressing (as much as you desire). Top with feta cheese.
Combine and enjoy.
