Servings: 4 servings
  • 2 cans 5 oz. Wild Selections® Solid White Albacore Tuna in Water
  • 3 medium zucchinis spiralized
  • 2 cloves of garlic
  • 8 oz. of mushrooms
  • 1 tbsp of olive oil
  • 1 tbsp of nutritional yeast
  • 1 tbsp of parsley fresh and chopped
  • ¾ cup of water
  • 1 cup of cashews
  • Salt to taste
  1. Preheat oven to 350 degrees.

  2. Cut spiralized zucchinis into 1 ½ inch ribbons, making them into zoodle form. Spread cut zoodles evenly onto a baking sheet lined with two paper towels. Sprinkle zoodles with salt and let sit for 25-35 minutes. 

  3. After zoodles have sit, layer another paper towel on top of them and roll them up. Squeeze out and discard any excessive water. Unroll and throw away paper towels. Set zoodles aside. 

  4. Place a large skillet over a medium heat. Add mushrooms and sauté until golden. Make sure to occasionally stir. Once mushrooms reach a golden brown color, add in garlic and cook for about 30 seconds. Remove from heat and set aside. 

  5. Blend together cashews, water, nutritional yeast, and a teaspoon of salt. Blend on high until sauce is completely smooth. Add up to ¼ more water if necessary when trying to reach a smooth consistency. 

  6. Pour sauce over mushrooms and stir to combine. Add zoodles and drained tuna to sauce. Combine well. Transfer tuna mixture into a baking dish and bake for 10-15 minutes. 

  7. Broil for a few minutes in order to reach a brown top, if desired. 

  8. Serve.
