Make a salmon burger that can stand out on it’s own by packing it with veggies. This kale and salmon patty recipe is perfect as an appetizer or in a burger. Using Wild Selections® Salmon and healthy kale, boost your next meal with this superfood.

Servings: 5 servings
  • 5 packages Wild Selections® Salmon Fillets in Olive Oil
  • 2 eggs
  • 1 tsp garlic powder
  • 1 tsp salt and pepper to taste
  • 2 tbsp lemon juice
  • 1 1/2 cup very finely chopped kale leaves, without stems
  • 1/2 cup chopped sweet yellow onion
  • 1/2 cup flax meal (use breadcrumbs as a non-paleo alternative)
  • 1/2 cup finely chopped fresh dill
  • 1 cucumber and lemon wedge to garnish
  1. Drain salmon fillets and place in a large bowl. Finely chop kale, onions, and dill for the patties. Cut lemon into wedges and reserve juice. Save one lemon wedge for garnish. Thinly slice cucumber and season to taste. 

  2. Add lemon juice, garlic powder, salt, pepper, eggs, and flax meal. Combine well. 

  3. Incorporate chopped kale and onions, ensuring the pieces are tiny enough where the patties will not fall apart into a chunky mess. 

  4. With clean hands, mix well. Form into five patties and place into plate lined with foil before refrigerating for 30 minutes minimum. 

  5. After the patties are done in the refrigerator, heat a large skillet with a small amount of olive oil over medium heat. Once hot, add the patties into the skillet. 

  6. Cook for five to seven minutes on each side until browned. Flip carefully so the patties don't break. 

  7. Top with dill. Serve with a lemon wedge and seasoned cucumber slices as garnish. Or transform this salmon patty meal into a burger by adding a bun.
