Zucchini noodles, otherwise known as zoodles, are the perfect option to lighten up any pasta dish. This Tuna Zoodles with Cannellini Beans recipe highlights the savory flavors of Wild Selections Solid White Albacore with bright ingredients like fresh lemon for the perfect spring or summer-time meal. Tip: If you don’t have a spiralizer, use a vegetable peeler to make ribbon-like zucchini noodles.

  • 2 tbsp. Extra Virgin olive oil
  • 2 medium-sized zucchini
  • 1 5 oz. can of Wild Selections Solid White Albacore in Olive Oil
  • 1 15.5 oz. can of cannellini beans drained and rinsed
  • ½ tsp cracked black pepper
  • 2-3 tbsp. fresh lemon juice
  • ½ tsp rinsed capers
  • A small handful of fresh Italian parsley for garnish
  1. Wash and chop the rough ends off of the zucchini
  2. Using a spiralizer, put the zucchini through on the smallest blade setting to make thin noodles. Or, shave thin ribbon-like zucchini noodles with a vegetable peeler.
  3. In a large pan, add the EVOO and heat over medium-high heat. Once the oil is warm, add in your zoodles and sauté for 1-2 minutes
  4. Add in the Wild Selections Solid White Albacore in Olive Oil, cannellini beans, lemon juice and cracked pepper
  5. Sauté for another 1-2 minutes
  6. Plate the zoodles mixture and top with capers, parsley, and more lemon juice if desired
  7. Serve immediately + enjoy!
