We’re celebrating Earth Day with a bright and fresh Spring Tuna Arugula Salad made with sustainably sourced Wild Selections® Solid White Albacore Tuna in Olive Oil. Unlike the usual creamy concoctions, this tuna salad recipe combines peppery arugula with earthy flavors of carrots and beets.

  • 1 can Wild Selections® Solid White Albacore Tuna In Olive Oil
  • 4 cups arugula
  • 1/2 cup grated carrot (1 large carrot)
  • 3/4 cup grated beets (2 small beets)
  • 1 tablespoon lemon juice
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • 1/4 cup olive oil
  • 1/2 teaspoon Dijon mustard
  • 1 teaspoon salt and pepper to taste
  1. Open a can of Wild Selections® Solid White Albacore Tuna In Olive Oil and divide remaining ingredients equally between two salad bowls.

  2. Place all dressing ingredients into a small jar and seal with lid. Shake well to mix the dressing thoroughly.

  3. Pour dressing over each salad and serve. Enjoy!
