Paleo Tuna Croquettes With Lemon Dill Aoili

Make these Paleo tuna croquettes for lunch all week, or freeze for later! Healthy, and easily made in your food processor.

Ingredients
  • 2 5 oz cans Wild Selections┬« Solid White Albacore Tuna in Water, drained
  • 1/4 onion, chopped
  • 1/2 red bell pepper, roughly chopped
  • 1 clove garlic, roughly chopped
  • 1 egg
  • 1/2 cup almond flour
  • 1/2 cup mayonnaise
  • 2 tbsp fresh dill
  • 1 lemon, juiced
  • olive oil for frying
  • salt and pepper for seasoning
Instructions
  1. Add the onion, red bell pepper, and garlic to a food processor. Process until finely chopped.

  2. Add tuna, egg, almond flour, salt, and pepper. Process until well combined.

  3. Heat olive oil in a cast iron (or other heavy) skillet.

  4. Form patties with approximately ┬╝ cup of the tuna mixture and fry until golden brown on both sides, flipping carefully (as they will have a tendency to fall apart when they are warm).

  5. Place on plate to cool for at least 5 minutes before serving.

  6. Meanwhile, to make the aioli, add all ingredients to food processor and process until well combined.

  7. Serve tuna croquettes with aioli.
