These Wild & Spicy Albacore Hummus Cakes are so easy to make that they are perfect for a quick dinner or easy to take out as a snack on the go! Featuring our Wild Selections Solid White Albacore in Water, mix in a few simple ingredients to make these delicious and nutritious albacore cakes!

  • 2 cans Wild Selections Solid White Albacore in water drained
  • 1/2 cup roasted red pepper or original hummus
  • 2/3 cup mashed sweet potato
  • 1 green onion sliced
  • 1/2 jalapeno deveined, deseeded, finely chopped
  • 2 large eggs
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  1. Preheat oven to 350F. Line a muffin tin with silicone muffin liners, paper liners, or grease with cooking spray.

  2. Combine all ingredients in a large bowl.

  3. Split evenly among 12 muffin cups. 

  4. Bake for 35 to 40 minutes until inserted toothpick comes out clean.  

  5. Remove from oven and let sit for 5 minutes.  

  6. Freeze for later use or store for up to 3 days in the refrigerator.
