15 minutes is all you need to roll up a delicious lunch or light dinner with this Wild Albacore Sushi recipe. The combination of wild caught, MSC-certified Wild Selections Solid White Albacore with savory nori wraps packs a burst of ocean flavor in every bite. Serve with ginger, soy sauce and chopsticks for an authentic culinary experience in your own home!
- 1 5 oz. can of Wild Selections Solid White Albacore in Water
- 1 1/2 cups of sushi rice cooked
- 2-3 tbsp. of seasoned rice vinegar
- 2 sheets of nori or seaweed
- ½ medium-sized cucumber cut into strips
- ½ medium-sized avocado cut into long slices

Cook the sushi rice according to instructions on its package and set aside to cool.

Once the rice is cooled, mix in the seasoned rice vinegar in a sideways chopping motion.

Lay down 1 sheet of nori, shiny side down, on a sushi mat or plastic wrap.

Spread about ¾ cup of the sushi rice evenly onto the nori, leaving about an inch of space without rice at the top.

Place a horizontal line of cucumber, avocado and albacore in the center of the nori sheet.

Starting from the bottom, gently roll the nori tightly around the veggies and albacore.

Dip your fingers into a small dish of water and brush them along the top inch of nori without rice and finish rolling to seal the sushi roll shut.

Using a large, sharp knife, cut the roll in half, then into thirds. Tip: it helps if you wet the knife before slicing. Repeat with remaining ingredients and enjoy!
