20 Jan Tuna Nicoise Sandwich
Take lunchtime from ordinary to gourmet with this Tuna Nicoise Sandwich recipe. The delicate taste of Wild Selections® Solid White Albacore Tuna in Olive Oil pairs perfectly with crisp vegetables, fresh basil, and hardboiled eggs - all enclosed in your favorite crusty bread loaf. This sandwich can be made ahead of time and refrigerated overnight.
- 2 tbsp white wine vinegar
- 3 tbsp olive oil
- 1 tbsp dijon mustard
- 2 cans Wild Selections® Solid White Albacore Tuna in Olive Oil
- 1/3 cup sliced cucumber
- 1/2 red onion, thinly sliced
- 4 tbsp olive tapenade or black olives
- 2 hard boiled eggs, sliced
- 8 inch round bread loaf
- fresh basil to taste
- salt and pepper to taste
Whisk olive oil, vinegar, and mustard together in a bowl. Sprinkle with salt and pepper. Add tuna and toss. Combine mixture with cucumber and onion.
Cut bread in half horizontally. Scoop out some of the interior of the bread.
Spread tapenade or arrange olives on the bottom half of the bread loaf and top with basil leaves. Place egg slices on top of basil and sprinkle with a little pepper. Pile on tuna mixture and close the sandwich.
Let stand or refrigerate for 1 hour. This recipe can be made ahead of time and refrigerated overnight. Cut into quarters before serving.
