- 4 5 oz cans of Wild Selections Solid White Albacore in water drained
- 3 cups of fontina cheese shredded
- 2 cloves of garlic minced
- 2 teaspoons of olive oil
- 2 tablespoons of capers
- 1 cup of grape tomatoes sliced in fourths
- 1 red onion diced
- 1/3 cup of celery chopped
- 1/3 cup of olives
- ¼ cup of parsley
- ¼ cup of basil
- Salt and pepper to taste
- 1 tablespoon of dry yeast fast acting
- 1 teaspoon of granulated sugar
- 1 tablespoon of honey
- 1 teaspoon of salt
- 1 cup of low fat milk
- ½ cup of sunflower oil
- 2 ½ tablespoons of bran wheat or oat
- 2 eggs
- 4 cups of flour
Warm olive oil in large frying pan. Sauté onions and garlic. Add celery and tomatoes and fry until softened.
Lower heat and add olives, capers, basil, and parsley. Stir together. Turn off heat.
Add tuna meat to the sautéed mixture, season with pepper and salt.
Put milk in pot and slowly bring to a boil. Add yeast to the warm milk and store pot in warm dark place for 15 minutes so yeast can rise.
Once yeast foams to surface add in salt, olive oil, honey, eggs, and 3 ½ cups of flour. Fold together gently with spatula.
Let the dough stand for 5 minutes, then mix in the bran.
Add the remaining flour to mixture and knead for roughly 5 minutes.
Let the dough rise in a warm, dark location for 2 hours.
Preheat oven to 400F.
Punch dough out to release air after it has risen.
Divide dough into 2 equal portions. Roll first portion out in a circle. Let rest for 2 minutes.
Slice the dough similar to a pizza, making 12 equal sized triangles.
Line a baking sheet with parchment paper and place a small oven-safe bowl in the center. Arrange the dough triangles around the bowl with the points of triangles on the outside, and thick portions slightly overlapping (like the shape of a sun).
Sprinkle the 1/4th of the shredded cheese around the bowl on top of the thick side of the triangles. Place half of your tuna filling over the cheese, sprinkle tuna filling with 1/4th of the shredded cheese.
Bring the pointed side of the triangle over the filling and secure under the thick side of triangle. Repeat for remaining 11 triangles.
Repeat steps with second portion of dough to make another tuna crescent ring.
Bake rings for 23 minutes or until golden brown. Cool 5 minutes before serving.
