Tuna Collard Wraps

Bring a different kind of lunch to work this year! The perfect recipe to start off your new year’s resolution meals, complete with Wild Selections® Solid White Albacore Tuna in Olive Oil, has arrived and you won’t be craving anything else.

Ingredients
- 1 (5 oz.) can Wild Selections® Solid White Albacore Tuna in Olive Oil
- 2 collard leaves
- 2 boiled potatoes chopped
- 1 egg hard boiled
- 1 avocado sliced
- 1 red onion sliced
- 2 cups cherry tomatoes
- 2 cups green beans
- 1 cup Kalamata olives
- ¼ lemon
- 4 tbsp pesto
- 1 tbsp capers
- 1 tsp olive oil
- Salt and pepper to taste
Instructions

Remove spine from collard leaves. Make sure the spin is trimmed down enough so that it is flat with the rest of the collard leaf.

Place a large skillet of water over a medium-high heat. Place leaf in water for 30 seconds to 1 minute.

Take out leaf and place in an ice bath for 10-15 seconds. Set aside on a towel to dry.

In a large mixing bowl, combine your tuna, capers, olive oil, lemon, and salt to taste. Set aside.

Place collard leaf on cutting board and spread with pesto sauce. Place remaining ingredients onto leaf and add tuna mix. Wrap up like a burrito.
