27 Jul Lemon Salmon and Avocado Bites

Try out these super simple and tasty Lemon Salmon and Avocado Bites
- 1 3.8 oz can Wild Selections® Salmon Fillets, drained
- 1 1/2 tbsp mayonnaise (or 2-3 tablespoons mashed avocado)
- 2 tsp lemon zest
- 1 tbsp red onion, finely diced
- 8-10 small gluten-free or grain-free crackers (or crackers of choice, or use my Yuca Crisp recipe to make your own)
Optional: dash of salt and pepper
In a bowl mix the salmon, mayonnaise (or avocado), salt and pepper. Mix well.
Scoop a tablespoon of mixture onto each cracker.
Sprinkle each salmon-topped cracker with red onion and lemon zest.
