26 Jan Tuna Penne With Red Onion
Craving a sushi roll but don’t want to bother with takeout? Try this nutritious at-home option. Use Wild Selections® Solid White Albacore Tuna in Water, rice, and fresh vegetables to make this tasty dish. Perfect for a light lunch or dinner!
- 3/4 cup cooked rice (white or brown)
- 1 tsp canola oil
- 1 tbsp rice vinegar
- 1 1/2 tsp soy sauce
- 1/2 tsp wasabi
- 1/2 avocado
- 3/4 cup spinach
- 1/2 cup sliced cucumber
- 2 sliced scallions
- 1 can Wild Selections® Solid White Albacore Tuna in Water
- Salt and pepper to taste
- sliced nori to taste
Whisk rice vinegar, soy sauce, and wasabi in a small bowl.
Toss rice, spinach, tuna, cucumber, and scallions in a larger bowl. Top with avocado slices.
Pour dressing over rice mixture and season with salt and pepper.
Optional: top with sliced nori to add some crunch!
